										<content:encoded><![CDATA[<p>In the midst of the rosé revolution, which is becoming more and more complex, we are looking to create a gastronomic wine that shows the uniqueness of the ancestral Mallorcan variety Gargollassa. This wine is the result of more than a decade of experimentation and a lot of effort to recover a local variety, which inexplicably was on the verge of extinction. Old documents, including the famous collection of Archduke Luis Salvador, describe it as one of the most recommended varieties for the production of quality wines in Mallorca. This pre-phylloxera variety, descended from the Heben and Monastrell varieties, has come to remind many of a Pinot Noir due to its delicate and elegant nuances.</p>
<p>Grape varieties: Gargollassa (average yield 1 kg/plant)<br />
Alcohol content: 13.5%<br />
Aging capacity: 2-3 years<br />
Production: 933 bottles of 0.75 L</p>
<p>PRODUCTION<br />
Manual harvest and selection of grapes in the winery. Pressed at very low pressures &#8211; maximum yield 58% &#8211; with a closed Inertys press, which enhances the primary and fruity aromas thanks to protection against oxidation during pressing. Fermentation with native yeast in stainless steel tanks at 14-16ºC for approximately 25 days. Very gentle filtration to respect the complexity. It is made with very little sulphur.</p>
<p>TASTING NOTES<br />
SIGHT<br />
Clean and bright, pale salmon colour with pinkish hues.</p>
<p>NOSE<br />
It is young and frank in aromas, with predominant aromas of fresh varietals such as currant, wild raspberry, grapefruit-type citrus and red flowers.</p>
<p>MOUTH<br />
The attack is dry and refreshing, light and certainly citrusy with a combination of crunchy red fruit and dried red flowers.</p>
<p>PAIRING<br />
Ideal with seafood rice, salads or Asian cuisine.</p>

<p>PRODUCTION<br />
Manual harvest in 12kg boxes. Subsequent passage of the grapes through a selection table where strict quality control is carried out. Gentle pressing of the bunches at low pressures in a pneumatic press to prevent oxidation. Long fermentations in stainless steel tanks at low temperatures of approximately 14ºC for about 40 days to preserve the subtlety of the varietal aromas.</p>

										<content:encoded><![CDATA[<p>The Gargollassa and Syrah varieties are particularly Mediterranean in character, as is the influence of the alluvial and calcareous soils of the Son Fortesa estate, which is located on the slopes of the Sierra de Tramuntana, in Alaró (Mallorca).<br />
The Gargollassa variety is the result of two decades of experimentation and hard work to recover a native Mallorcan variety that was, inexplicably, on the verge of extinction. Old documents, including the famous compilation by Archduke Luis Salvador, describe it as one of the most recommended varieties for the production of quality wines. In 1998, Bodega Ribas found the last 3 specimens left on the island. In 2004, the Fluxà Family decided to collaborate in the recovery of this variety and 2,500 vines were grafted onto the Son Fortesa estate.</p>
<p>Grape varieties: Gargollassa, Syrah<br />
Aging: 12 months in barrels: 100% French oak, 500L (Gargollassa) and 225L (Syrah). Barrels from 1st, 2nd and 3rd year.</p>
<p>PRODUCTION<br />
Manual harvest. Grain by grain selection at the table, where the quality of the grapes is controlled. Fermentation then takes place at moderate temperatures between 25 and 27ºC to extract the primary aromas of red fruit from the Gargollassa and the soft, round tannins from the Syrah. Subsequent aging in barrels for 12 months.</p>
