Garnacha from the Los Peros area at 850 metres above sea level, old vines, around 100 years old, granite soils with outcrops of red granite (episienite). The vineyard is located within a ZEPA (Special Protection Area for Birds) area and the Natura 2000 network. Dry-land vineyard, with traditional goblet training and organically cultivated, registered with the CAEM (Organic Agriculture Committee of the Community of Madrid). Harvested manually in 15 kg boxes. Spontaneous fermentation, gentle maceration for 60 days with whole grapes. Aged for 1 year in a 3,000-litre French oak cask.<\/p>\n
