In the midst of the ros\u00e9 revolution, which is becoming more and more complex, we are looking to create a gastronomic wine that shows the uniqueness of the ancestral Mallorcan variety Gargollassa. This wine is the result of more than a decade of experimentation and a lot of effort to recover a local variety, which inexplicably was on the verge of extinction. Old documents, including the famous collection of Archduke Luis Salvador, describe it as one of the most recommended varieties for the production of quality wines in Mallorca. This pre-phylloxera variety, descended from the Heben and Monastrell varieties, has come to remind many of a Pinot Noir due to its delicate and elegant nuances.<\/p>\n

PRODUCTION
\nManual harvest and selection of grapes in the winery. Pressed at very low pressures – maximum yield 58% – with a closed Inertys press, which enhances the primary and fruity aromas thanks to protection against oxidation during pressing. Fermentation with native yeast in stainless steel tanks at 14-16\u00baC for approximately 25 days. Very gentle filtration to respect the complexity. It is made with very little sulphur.<\/p>\n
TASTING NOTES
\nSIGHT
\nClean and bright, pale salmon colour with pinkish hues.<\/p>\n
NOSE
\nIt is young and frank in aromas, with predominant aromas of fresh varietals such as currant, wild raspberry, grapefruit-type citrus and red flowers.<\/p>\n
MOUTH
\nThe attack is dry and refreshing, light and certainly citrusy with a combination of crunchy red fruit and dried red flowers.<\/p>\n
