Climate: High temperatures and a markedly dry summer season. Formentera has a windy character that helps the good health of the vineyards.
Pruning style: Double Royat cordon. Average age of the vineyards: 19 years.
Harvest: manual in 12 kg boxes from the end of August to the beginning of September.
Maceration: Whole bunches for 18 hours in a cold chamber. Pre-fermentation maceration for three to four days.
Selection: Selection table, destemming and crushing.
Fermentation: 10 days.
Aging: three and a half months in used French oak barrels and one year in a tank.
Cold stabilization: No. Filtration at 1 micron.
Tasting notes: Medium-bodied garnet colour. With a high aromatic complexity where the aromas of forest fruits stand out. With a background of cedar and undergrowth. The palate is sweet, with fine tannins and a long aftertaste.
Pairing: It pairs very well with cheeses, sausages, pasta, rice, stews, bullits and sofrits, white meats, poultry and other grilled meats.
