Orography: Open flat horizons with a high level of exposure.
Climate: High temperatures and a markedly dry summer season. Formentera has a windy character that helps the good health of the vineyards.
Pruning style: Double Royat cordon. Average age of the vineyards: 18 years.
Harvest: Late at the end of September. Over-ripening on the plants themselves. Manual harvest in 12 kg boxes.
Fermentation: 21 days. Fermentation stopped with cold.
Cold stabilisation: Yes. Filtration at 0.45 microns.

Tasting notes: Pale golden colour. Floral and stone fruit aromas stand out, on a mineral background. With light tropical notes. On the palate it is sweet, broad and fleshy, but with a good entry given its balance between sweetness, acidity and alcohol content. It has a pleasant finish. It shows a very good aptitude for aging in the bottle.
Pairing: Wine recommended to accompany appetizers based on blue cheeses, cured cheeses and foie gras. In addition, it is ideal to combine with pastas and sweet creams during dessert.
