CHAPIRETE BARRICA

Soil Type: Poor in organic matter. Mainly sandy with a high silica content, allowing these vineyards to survive phylloxera, thus belonging to the small number of hectares in this DO that have these characteristics.
Vineyards: Vines from the Finca de Chapirete, located in the Valladolid town of Alcazarén. Pre-phylloxera vineyards worked as organic agriculture and glass driving. Yield less than 2,500 kg/Ha. The special climate of the area provides little rainfall during the summer season, causing a perfect ripening of the grapes.
Harvest: Manual using 20kg boxes which allows the grapes to arrive intact at the winery, as well as a first selection of the grapes in the field and later a second selection of grapes is made on the table in the winery.
Elaboration: Fermentation in 500L French and Central European oak barrels seeking the perfect combination between fruity aromas and those of a delicate aging in wood.

Tasting notes

Straw yellow with golden tones. Intense and complex aromas of ripe fruit and spices in perfect balance. Broad and voluminous at the same time as delicate and silky, with a lot of nuances and a long finish. Very persistent.

Consumption: Perfect pairing as an aperitif with Iberian ham, nuts and to accompany creamy and cured cheeses, smoked fish (salmon, trout, anchovies) and white meats (turkey, chicken).
