CHAPIRETE PREFILOXÉRICO

Soil Type: Poor in organic matter. Mainly sandy with a high silica content, allowing these vineyards to survive phylloxera, thus belonging to the small number of hectares in this DO that have these characteristics.
Vineyards: Strains from the Chapirete estate, located in the Valladolid town of Alcazarén. Pre-phylloxera vineyards of the Verdejo variety, worked as organic farming and glass driving. Yield less than 2,500 kg/Ha. The special climate of the area provides little rainfall during the summer season, causing a perfect ripening of the grapes.
Harvest: Manual harvest in 20 kilo boxes, later the grapes go through the manual selection table, thus choosing the grapes that present the best characteristics for this type of wine.
Production: To preserve aromas we carry out a subtle process where the must extraction is carried out at low pressure and in an inert atmosphere controlling oxidation at all times. Fermentation in stainless steel tanks at low temperature for 10-12 days.

Tasting notes

Straw yellow with golden tones. Very complex nose with aromas of herbaceous notes (fennel and mint), white fruit (apple) and a mineral touch. Wide, intense and persistent mouth. Slightly oily and varietal touch.

Consumption: Temperature: 8-10°C.
Pairing: wine suitable for accompanying cured cheeses and dishes based on fish, seafood and rice.
