Variety: 100% Verdejo
Vol. Alcohol: 13%vol.
Type of Soil: Deep soils, mainly sandy and not very fertile.
Vineyard: Selection of plots between 20 and 30 years old located on the plateau’s highlands at 750 metres above sea level. Planted on trellises.
Harvest: Mechanized night harvesting so that the grapes retain their organoleptic qualities intact.
Production: The must is extracted at low pressure and in an inert atmosphere, thus avoiding possible oxidations and preserving all the grape’s own aromas. Fermentation in stainless steel tanks at low temperature for 10-12 days.
Tasting notes: Straw yellow with greenish reflections. Very fine nose with predominance of herbaceous notes (fennel and mint), white fruit (green apple) and aniseed hints. In the mouth it has structure, volume and a slight bitter touch typical of the variety.
Consumption: Temperature: 6–8ºC
Pairing: wine especially suitable for fish, smoked foods and seafood.
