Harvest: September 5, 2018. Manual harvest in 12 kg boxes.
Maceration: Whole bunches for 18 hours in a cold chamber. Pre-fermentation and post-fermentation maceration.
Selection: Selection table, destemming and crushing.
Fermentation: 10 days.
Aging: 12 months in new French Allier oak barrels plus two years in the bottle.

Tasting note: Medium-intensity garnet color. On the nose, ripe red fruit, lavender, liquorice, leather and a marked underbrush background stand out. On the palate, noble woods, ripe red fruit and balsamic notes stand out. It has good acidity, good structure with fine tannins and a pleasant finish.
Food pairing: A wine that pairs very well with cheeses, stews and fish stews, pasta, sofrit pagés, game and other types of meat.
Bottle production: limited to 870 0.75 l bottles.
