SES PEDRES

White wine, complex and very elegant.

Manual harvest in 15 kg boxes, first selection of thegrapes in the vineyard and a second manual selectionof the best grapes in the winery.
Fermentation and ageing in 700-litre French oak barrelsfor 9 months, during which, depending on the evolution,a ¨Battonage¨ is carried out. This process, carried out bymoving the lees, benefits the wine as it allows all the characteristics of the grape to be expressed in the best possible way to obtain fruity aromas and, together with the qualities provided by the wood, lead to smoother, more complex and harmonious wines. After this process, the wine spends 24 months in the bottle before being released on the market.

Tasting
Appearance: Yellow colour with golden highlights. Unfiltered wine.
Nose: Very good aromatic intensity. Mineral notes like marine fossils, chalky and steely. Nuances of wild herbs such as cistus, Mallorcan broom or laurel; dried herbs and spicy. Aroma of fruits like melon, dried apricots and pear jam. Rosemary honey and wet sand, reminiscent of the smell of hands fresh from the sea.
Palate: Dry, smooth and full-bodied wine with notes of ripe fruit, nuts and hazelnuts. It has an excellent balance between acidity and alcohol with a pleasant mineral aftertaste that makes it an ideal wine for a good lunch.
