

PANDEMONIUM (RIOJA)
The pronounced acidity of Pandemonium makes it an exclusive wine with delicate, silky bubbles that are nonetheless lively and vivacious. Its freshness is in perfect harmony with the complexity imparted by lengthy aging in contact with its lees, which in turn imparts a tremendous creaminess on the palate. An elegant, round, harmonic and long wine that places Rioja on the international map of sparkling wines. This is Pandemonium, a gateway to the unknown and a new reality for Spanish sparkling wines.
The San Millán de la Cogolla Monastery is situated in the Alto Najerilla, a region in the southwest of La Rioja devoted to the cultivation of cereal crops. Thanks to some historical archives found in the monastery library in San Millán, it was discovered that in the past these fields were also used to grow grapes.
In 2015 we started a research project and found that the weather conditions were very similar to those of the much-loved Champagne, and met all the requirements for producing a quality sparkling wine.
And we were right. Due to the region’s harsh climate, privileged soils, and high altitude, we are able to produce two sparkling wines of the “crisp” type, with a particular freshness and acidity that is impossible to replicate in any other part of our country.
