Varieties: 100% Cabernet Sauvignon.
Alcohol content: 14 %.
Soils: Calcareous loam.
Orography: Open flat horizons with a high level of exposure.
Climate: High temperatures and a markedly dry summer season. Formentera has a windy character that helps the good health of the vineyards.
Pruning style: Double Royat cordon. Age of the vineyards: 22 years.
Harvest: End of August. Manual harvest in 12 kg boxes.
Maceration: Whole bunches for 18 hours in a cold chamber.
Selection: Selection table, destemming and crushing.
Fermentation: Spontaneous with native yeasts. Minimal intervention during its elaboration, only carrying out the essential punching down. Without clarifying or stabilizing.
Aging: four and a half months in used French oak barrels.
Filtration: Smooth, 3-6 microns.
Tasting notes: Medium-layered ruby red in colour. Very expressive on the nose. Predominantly blackberries and other forest fruits. Notes of ink and cedar. Mineral and balsamic background. On the palate it is tannic and fleshy. An aftertaste of noble woods stands out.
Pairing: It goes very well with cheeses, sausages, stews and all types of meat.
Production: 875 0.75 l bottles.
